Sausage, Cured and Ground Meats contains at least 5# of meat, with ground beef, pork and/or chicken (always at least 1# of beef), plus a selection of sausages and cured meats like bacon, summer sausage or smoked ham.
Braising and Stewing Cuts are the low and slow workhorses of the kitchen. Each basket will contain at least 2 or 3 packages meant to feed at least 4 people. You may find items like pot roasts, pork butt roasts, stew meat or chicken back quarters in this basket.
Tender Cuts are the quick-cooking items to sear or grill, including steaks, chops and chicken breasts. May include lamb and veal. A minimum of 2 pieces/servings of each type will be included (for instance, one basket may include two ribeye steaks, one 2# pork loin roast and two chicken breasts). Each basket will contain enough meat for 6 to 8 portions, and chicken breasts will always be included as part of the basket.
