Chef Marshall Paulsen grew up in St. Paul, and began his restaurant career at 15 working as a busboy + bartender. After earning his degree in hospitality management from the University of Wisconsin, he began his real education in food + service at a small cafe that served farm-fresh food grown by local Menomonie farmers.  He made his way from line cook to Executive Chef, and then in 2008, found a perfect match in the Birchwood Cafe.  

Paulsen’s vibrant, accessible cooking shines with the vision of what scratch cooking can be.  He creates “Good Real Food” for multitudes through his many long-standing relationships with farmers, knowing that seasonal, locally-grown produce + meats are of much higher quality than when shipped from elsewhere. And this philosophy of making good food extends to making good people too: everyone at the Birchwood is encouraged to be healthy, fully present people who show up physically, mentally and emotionally, an approach that Paulsen believes makes the Birchwood one of the best places to work.
