

















Braise Restaurant and Culinary School will open in fall 2011. Braise Restaurant will have a commitment to local foods; the menu will change often, featuring seasonal ingredients from Wisconsin farmers. These farmers not only supply all of the ingredients but are also investors in the restaurant.
Located in the Historic and diverse neighborhood of Walker’s Point, the restaurant space consists of two conjoined buildings: a 1907 cream-city brick building and a 1940’s era former bowling alley. Braise will repurpose much of the original building materials; bowling alley lanes, hardwood floors and tin ceilings. The space will include community and traditional seating, a brick oven and a food bar for guests to watch the chefs at work. We will even have an on-site culinary school and our own roof top garden! Braise sample items can include a spring time roasted asparagus and morel mushroom ragout served with a hand-made gnocchi; a late summer heirloom tomato salad; and braised pork belly with winter lacinato kale and beans. We will also feature fresh pastries, condiments and cocktails, including bread, pickled veggies, and fresh fruit-based cocktails made from scratch at the restaurant.
How Can You Get Involved?
We’d love for you to join us and are thrilled to offer memberships to Braise Restaurant and Culinary School, Milwaukee’s first Community Supported Restaurant. This is an exciting new way to get involved while supporting your dining community, combined with the opportunity to partake in a variety of culinary experiences. What is a Community Supported Restaurant? Think CSA (Community Supported Agriculture), which is a way for individuals in the community to support a farm by buying shares upfront and in return being delivered fresh vegetables during the growing season. Take this idea and adapt it for a restaurant, by buying shares (memberships) and in return receiving dinners and/or cooking classes throughout the year.
Every membership level offers vouchers to be used for dinners, cooking classes and events with Braise. Select memberships also include Kitchen Worker Shares, Private Cooking Classes and memberships to the Urban Ecology Center and Family Farm Defenders. You can even get your name inscribed on a vegetable or herb planter in the rooftop garden! As a valued member, you will also be the first to find out about special events and dinners at Braise Restaurant and Culinary School and Braise-on-the-Go.

Kitchen Worker Share - Experience what it takes to cook in a restaurant by spending a day in the kitchen working and learning from professional chefs. Depending upon your level of ambition, you may choose to watch and learn or roll up your sleeves and mix it up with the chefs! Afterwards, sit down, relax, and enjoy dinner for two with a bottle of wine. Approximate value: $500.00
Private Cooking Classes - Enjoy a personalized cooking class for 8 people. This is a demonstration class of the topic of your choosing. All you have to do is sit back, relax and enjoy the food, drink and recipes. Approximate value: $800.00
Special Dinners/Events - Be the first in line for Farmer Dinners, Sunday Suppers and other special events. A definite must for busy calendars.
Urban Ecology Center and Family Farm Defenders Memberships - In keeping with the Braise philosophy of supporting community organizations and learning more about local food systems, we'd like to help you get involved, too. Approximate value: $35.00 annually
Veggie Vanity - Have a friend or family's name (or your own!) inscribed on a vegetable or herb planter on our rooftop garden. The name will be forever associated with that item. Approximate value: Priceless!
